Chef Sam said “I’d like to make a spaghetti Bolognese for Thursday” and we said yum! We have just the thing to pair it with – a lovely Sangiovese from Stolpman Vineyards. Sangiovese is THE grape of Tuscany and goes with a tomato sauce like fall goes with sweaters. Stolpman makes beautiful wines through their commitment to preserving the natural environment for their vines through conscious farming, dry farming, sustainable employment. In the winery, they prefer native fermentation minimal manipulation.

This Sangiovese comes from their estate in Ballard Canyon in Santa Barbara County. It was aged for 22 months in neutral French oak before bottling. It has had over 3 years of additional aging in the bottle. The flavors have come together beautifully and the tannins have softened. The acidity is still there and will be amazing with the Bolognese.
