Today our wine journey takes us to Portugal. The hot, dry climate of the Alentejo region is ideal for the red grapes in this wine. Native to Portugal, the Trincadeira grape has flavors of raspberry, herbs and spice. Aragonez, known as Tempranillo in Spain, provides body and plum flavors. Lastly, the Syrah adds acidity, tannin and dark fruit flavors.
Chef Sam has prepared a beautiful Halibut dish for this evening, inspired by the Portuguese fish stew- Caldeirada de Peixe. She made a delicious tomato sauce, with just a hint of orange, which serves as the base for the dish. The halibut is wild caught and pan seared to perfection. The fish is served on the sauce along with crispy leek and blistered tomatoes.
We don’t hold to the fish with white wine rule, but rather pair complimentary flavors and components (acid, salt etc.)
