Welcome Autumn and with it, comfort food and wine. Today we are enjoying both a dish and a wine that come from the Northern part of Italy. According to winemaker Stefano Chiarlo “…an ideal climate and a remarkable diurnal temperature variation have distinguished this vintage, making it an “Exceptional” one. Harvest was carried out from 12 to 17 October, in line with a super classic vintage, yielding lesser grapes characterized by excellent quality."

This rich and delicious Barbaresco from the Piedmont region is paired with Chef Sam’s special this Thursday (11/7), Risotto Milanese. The creamy rice gets its earthy flavors and vibrant yellow color from the saffron that is in the dish. By weight, saffron can be more expensive than gold. The risotto is delicious on its own or with the addition of our Iberico pork chop. Either way, this Barbaresco will enhance the earthy and creamy deliciousness.
